Instructions
 

  • Rinse the maize kernels under cold water and drain them in a colander or strainer.In a large pot, bring the water to a boil. Add the maize kernels and cook for about 20-25 minutes, or until the kernels are tender. Stir occasionally to prevent sticking.
  • Once the maize kernels are cooked, drain them in a colander or strainer and set aside.In the same pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  • Add the cooked maize kernels back to the pot, along with the ground cumin, ground coriander, and salt. Stir well to coat the kernels with the spices.
  • Reduce the heat to low, cover the pot with a lid, and let the mixture simmer for about 5-10 minutes to allow the flavors to meld together.
  • Remove the pot from the heat and let the Maize Rice sit covered for a few minutes before serving.Fluff the Maize Rice with a fork and transfer it to a serving dish.
