Stuffed Savory Masa (Waina)

Ingredients
- Rice
- Tiger nuts
- Yogurt
- Onion
- Scotch bonnet pepper
- Salt
- Vegetable oil
- Minced meat
- Seasoning cubes
- Ginger powder
- Garlic powder
- Curry powder
- Thyme
- Ground pepper
Preparation Steps
- Soak the rice and tiger nuts in water overnight.
- Drain the soaked rice and tiger nuts.
- In a blender, blend the rice, tiger nuts, yogurt, onion, scotch bonnet pepper, and salt until smooth.
- Preheat a non-stick pan over medium heat.
- Pour a ladleful of the rice batter onto the pan and spread it evenly to form a thin pancake.
- Cook the pancake until it is set and lightly browned on one side. Flip it over and cook the other side.
- Remove the pancake from the pan and set it aside.
- In a separate pan, heat vegetable oil over medium heat.
- Add minced meat, seasoning cubes, ginger powder, garlic powder, curry powder, thyme, and ground pepper to the pan. Cook until the meat is browned and cooked through.
- Place a portion of the cooked meat on one side of the pancake and fold the other side over to form a semicircle.
- Repeat the process with the remaining pancake and meat.
- Serve the stuffed savory masa (waina) hot and enjoy!
