Stuffed Savory Masa (Waina)


  • Rice
  • Tiger nuts
  • Yogurt
  • Onion
  • Scotch bonnet pepper
  • Salt
  • Vegetable oil
  • Minced meat
  • Seasoning cubes
  • Ginger powder
  • Garlic powder
  • Curry powder
  • Thyme
  • Ground pepper

Preparation Steps

  1. Soak the rice and tiger nuts in water overnight.
  2. Drain the soaked rice and tiger nuts.
  3. In a blender, blend the rice, tiger nuts, yogurt, onion, scotch bonnet pepper, and salt until smooth.
  4. Preheat a non-stick pan over medium heat.
  5. Pour a ladleful of the rice batter onto the pan and spread it evenly to form a thin pancake.
  6. Cook the pancake until it is set and lightly browned on one side. Flip it over and cook the other side.
  7. Remove the pancake from the pan and set it aside.
  8. In a separate pan, heat vegetable oil over medium heat.
  9. Add minced meat, seasoning cubes, ginger powder, garlic powder, curry powder, thyme, and ground pepper to the pan. Cook until the meat is browned and cooked through.
  10. Place a portion of the cooked meat on one side of the pancake and fold the other side over to form a semicircle.
  11. Repeat the process with the remaining pancake and meat.
  12. Serve the stuffed savory masa (waina) hot and enjoy!
