  • maize meal
  • onion

Instructions
 

  • In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt.Gradually add the maize meal to the boiling water, stirring continuously with a wooden spoon or whisk to prevent lumps from forming.
  • Reduce the heat to low and cover the pot with a lid. Let the pap simmer for about 30-40 minutes, stirring occasionally to ensure it doesn't stick to the bottom of the pot. The pap is ready when it reaches a smooth and thick consistency. If desired, you can use a colander to strain any excess liquid from the pap.
  • While the pap is cooking, prepare the mixed vegetables. In a separate pan, melt the butter over medium heat.
  • Add the chopped onion and minced garlic to the pan and sauté until they become translucent and fragrant.
  • Add the diced carrots, bell pepper, zucchini, green beans, and corn kernels to the pan. Cook the vegetables for about 8-10 minutes, stirring occasionally, until they are tender yet still slightly crisp.
  • Sprinkle the ground cumin, paprika, salt, and pepper over the vegetables. Stir well to coat them evenly with the spices. Cook for an additional 2 minutes to allow the flavors to meld together.
  • Remove both the pap and mixed vegetables from the heat. Serve a generous portion of pap on a plate or bowl, and spoon the mixed vegetables on top. Garnish with fresh parsley or cilantro, if desired.
