In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt.Gradually add the maize meal to the boiling water, stirring continuously with a wooden spoon or whisk to prevent lumps from forming.
Reduce the heat to low and cover the pot with a lid. Let the pap simmer for about 30-40 minutes, stirring occasionally to ensure it doesn't stick to the bottom of the pot. The pap is ready when it reaches a smooth and thick consistency. If desired, you can use a colander to strain any excess liquid from the pap.
While the pap is cooking, prepare the mixed vegetables. In a separate pan, melt the butter over medium heat.
Add the chopped onion and minced garlic to the pan and sauté until they become translucent and fragrant.
Add the diced carrots, bell pepper, zucchini, green beans, and corn kernels to the pan. Cook the vegetables for about 8-10 minutes, stirring occasionally, until they are tender yet still slightly crisp.
Sprinkle the ground cumin, paprika, salt, and pepper over the vegetables. Stir well to coat them evenly with the spices. Cook for an additional 2 minutes to allow the flavors to meld together.
Remove both the pap and mixed vegetables from the heat. Serve a generous portion of pap on a plate or bowl, and spoon the mixed vegetables on top. Garnish with fresh parsley or cilantro, if desired.
Enjoy your flavorful and nutritious pap with mixed vegetables as a satisfying main dish or side dish.
