Suya

Ingredients

  • 2 lbs beef or chicken, thinly sliced
  • 1/4 cup peanut oil
  • 1/4 cup groundnut powder (peanut powder)
  • 2 tablespoons paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground nutmeg
  • 1 tablespoon ground cloves
  • Salt to taste
  • Skewers, soaked in water

Preparation Steps

  1. In a bowl, combine the groundnut powder, paprika, cayenne pepper, garlic powder, onion powder, ground ginger, ground nutmeg, ground cloves, and salt.
  2. Add the peanut oil to the spice mixture and mix well to form a paste.
  3. Add the thinly sliced beef or chicken to the paste and coat each piece evenly. Let it marinate for at least 1 hour, or refrigerate overnight for more flavor.
  4. Preheat your grill or broiler to high heat.
  5. Thread the marinated meat onto the soaked skewers.
  6. Place the skewers on the grill or under the broiler and cook for about 10-15 minutes, turning occasionally, until the meat is cooked and slightly charred.
  7. Remove from heat and let the skewers rest for a few minutes.
  8. Serve hot and enjoy!
