Ingredients

  • 2 lbs goat meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 teaspoons paprika
  • 2 teaspoons cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • Juice of 1 lemon
  • 2 scotch bonnet peppers, chopped
  • Fresh cilantro or parsley, for garnish

Preparation Steps

  1. In a large bowl, combine the goat meat, vegetable oil, chopped onion, minced garlic, grated ginger, paprika, cayenne pepper, dried thyme, dried rosemary, salt, and black pepper. Mix well to coat the meat with the spices. Let it marinate for at least 30 minutes, or refrigerate overnight for more flavor.
  2. Preheat the oven to 350°F (175°C).
  3. Transfer the marinated goat meat to a baking dish and cover it with aluminum foil. Bake for 1 hour or until the meat is tender.
  4. In a separate bowl, mix together the tomato paste, soy sauce, honey or brown sugar, and lemon juice.
  5. Heat a large skillet over medium heat and add the tomato paste mixture. Cook for a few minutes until it thickens slightly.
  6. Add the baked goat meat to the skillet and stir well to coat the meat with the sauce. Cook for an additional 5 minutes.
  7. Add the chopped scotch bonnet peppers and cook for another 2 minutes.
  8. Remove from heat and garnish with fresh cilantro or parsley.
  9. Serve hot and enjoy!
