- In a bowl, whisk the eggs until well beaten. Set aside.Heat the vegetable oil in a large skillet or frying pan over medium heat
- Add the minced garlic to the hot oil and sauté for about 1 minute, until fragrant.Add the torn lettuce leaves to the skillet and stir-fry for 1-2 minutes, until slightly wilted
- Push the lettuce to one side of the skillet and pour the beaten eggs into the empty space.Let the eggs cook undisturbed for a minute, then gently scramble them with a spatula, incorporating them with the lettuce.
- Continue to stir-fry for another 2-3 minutes, or until the eggs are cooked through and the lettuce is tender. If desired, drizzle soy sauce over the fried lettuce and eggs, and season with salt and pepper to taste. Toss to combine.
- Remove from heat and transfer the fried lettuce with eggs to a serving dish. Garnish with chopped green onions or cilantro, if desired.
