Ingredients
- 500g dodo (amaranth leaves)
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon curry powder
- 1/2 teaspoon black pepper
- 1/2 cup water
Preparation Steps
- Wash the dodo leaves thoroughly and chop them into small pieces.
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onions and minced garlic to the pan. Sauté until the onions become translucent.
- Add the chopped tomatoes to the pan and cook until they soften.
- Add the chopped dodo leaves to the pan and stir well.
- Season with salt, curry powder, and black pepper. Mix everything together.
- Pour in the water and cover the pan. Allow the dodo to cook for about 10-15 minutes, or until it is tender.
- Remove from heat and serve hot as a side dish with your main meal.
