Ugandan Dodo


  • 500g dodo (amaranth leaves)
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon curry powder
  • 1/2 teaspoon black pepper
  • 1/2 cup water

Preparation Steps

  1. Wash the dodo leaves thoroughly and chop them into small pieces.
  2. In a large pan, heat the vegetable oil over medium heat.
  3. Add the chopped onions and minced garlic to the pan. Sauté until the onions become translucent.
  4. Add the chopped tomatoes to the pan and cook until they soften.
  5. Add the chopped dodo leaves to the pan and stir well.
  6. Season with salt, curry powder, and black pepper. Mix everything together.
  7. Pour in the water and cover the pan. Allow the dodo to cook for about 10-15 minutes, or until it is tender.
  8. Remove from heat and serve hot as a side dish with your main meal.
