Preparation Steps
- Soak the beans in water overnight or for at least 5 hours.
- Drain the soaked beans and rinse thoroughly.
- In a large pot, add the rinsed beans and enough water to cover them. Cook the beans until they are tender.
- While the beans are cooking, prepare the sauce. Heat palm oil in a separate pot.
- Add chopped onions, bell peppers, and tomatoes to the pot and sauté until they are soft.
- Add stockfish, smoked fish, crayfish, pepper, seasoning cubes, and salt to taste. Stir well to combine.
- Add the cooked beans to the sauce and mix everything together.
- Cook the mixture on low heat for about 30 minutes to allow the flavors to meld.
- Add the vegetable leaves and stir until they are wilted.
- Simmer for an additional 5 minutes.
- Remove from heat and let it sit for a few minutes before serving.
