Eba and Ogbono Soup

Ingredients
- 1 cup ogbono seeds
- Assorted meat and fish
- Palm oil
- 2 tablespoons ground crayfish
- 2 cups spinach or ugu leaves, chopped
- 1 onion, chopped
- 2 seasoning cubes
- Salt to taste
- Water for cooking
- Garri (cassava flakes) or fufu (fermented cassava) for serving
Preparation Steps
- Grind the ogbono seeds and set aside.
- In a pot, boil the assorted meat and fish with seasoning cubes, chopped onion, and salt until tender.
- Heat palm oil in a separate pot, add the ground ogbono seeds, and stir-fry for a few minutes.
- Add the boiled meat and fish stock to the pot with the ogbono and stir well.
- Cover the pot and let it cook for about 20-25 minutes, stirring occasionally to prevent sticking.
- After 20-25 minutes, add the chopped spinach or ugu leaves and stir well.
- Cook for an additional 5 minutes until the vegetables are wilted and cooked.
- Adjust the seasoning with salt and ground crayfish according to taste.
- Remove from heat and serve the ogbono soup with eba (garri) or fufu.
