Instructions

  • Pour in the vegetable broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are cooked through and easily mashed with a fork.
  • Using a blender or immersion blender, carefully puree the soup until smooth and creamy. Be cautious when blending hot liquids.
