  • Preheat your oven to 400°F (200°C).
  • Place the butternut squash cubes on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat the squash evenly.
  • Transfer the baking sheet to the preheated oven and roast the butternut squash for 25-30 minutes, or until it is tender and lightly caramelized. Remove from the oven and let it cool slightly.
  • Lower the oven temperature to 350°F (175°C).
  • In a mixing bowl, combine the crumbled feta cheese, chopped parsley, and fresh thyme leaves. Mix well to incorporate the ingredients.
  • Grease a baking dish and arrange a layer of roasted butternut squash cubes at the bottom. Sprinkle a portion of the feta mixture over the squash. Repeat the layers until all the ingredients are used, finishing with a layer of the feta mixture on top.
  • Place the baking dish in the oven and bake for 10-15 minutes, or until the feta is softened and lightly golden.
  • Remove the bake cake from the oven and let it cool for a few minutes. Slice into portions and serve warm. Garnish with additional fresh herbs, if desired.
