Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking dish with aluminum foil or parchment paper.In a mixing bowl, combine the olive oil, lemon juice, minced garlic, paprika, dried thyme, salt, and pepper. Whisk well to create a marinade.
  • Place the tilapia fillets in the prepared baking dish. Pour the marinade over the fish, ensuring each fillet is coated evenly.Bake the tilapia in the preheated oven for about 15-20 minutes or until the fish is opaque and flakes easily with a fork.
  • Remove the baked tilapia from the oven and let it rest for a few minutes before serving.
  • Prepare the atieke according to the package instructions. Typically, it involves steaming or soaking the couscous-like grains in hot water until tender and fluffy.Fluff the atieke with a fork and transfer it to a serving platter.
  • In a mixing bowl, combine the thinly sliced red onion, diced tomatoes, chopped parsley, chopped mint, lemon juice, olive oil, salt, and pepper. Toss gently to combine all the ingredients.
  • Let the salad marinate for a few minutes to allow the flavors to meld together.
  • Arrange the baked tilapia fillets on top of the atieke on the serving platter.Serve the onion and tomato salad on the side or spoon it over the fish and atieke.
  • Garnish with additional fresh herbs, if desired.
