TigerNut Pudding

Ingredients

  • 1 cup TigerNuts
  • 2 cups water (for soaking)
  • 3 cups water (for blending)
  • 1/4 cup coconut milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt

Preparation Steps

  1. Place the TigerNuts in a bowl and cover them with 2 cups of water. Let them soak overnight or for at least 8 hours.
  2. Drain the soaked TigerNuts and rinse them well.
  3. In a blender, combine the soaked TigerNuts and 3 cups of water. Blend until smooth and creamy.
  4. Place a fine-mesh strainer or cheesecloth over a large bowl. Pour the blended mixture into the strainer to separate the TigerNut milk from the pulp. Press the pulp with a spoon to extract all the milk.
  5. Discard the pulp or save it for other recipes.
  6. Transfer the TigerNut milk to a saucepan and add coconut milk, honey or maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir well.
  7. Place the saucepan over medium heat and cook the mixture, stirring constantly, for about 45 minutes or until it thickens to a pudding-like consistency.
  8. Remove the saucepan from heat and let the TigerNut pudding cool.
  9. Once cooled, refrigerate the pudding for at least 2 hours to chill and set.
  10. Serve the TigerNut pudding chilled and enjoy!
