- Eggplant
- Sitaw (Long beans)
- Pechay (Bok choy)
- String beans
- Peanut butter
- Garlic
- Onion
- Annatto powder
- Fish sauce
- Salt
- Pepper
- Cooking oil
- Water
Preparation Steps
- Heat cooking oil in a pot and sauté garlic and onion.
- Add water and bring to a boil.
- Add the eggplant, sitaw, pechay, and string beans to the pot. Cook until the vegetables are tender.
- In a separate bowl, dissolve peanut butter in water and add to the pot.
- Add annatto powder and fish sauce. Stir well to combine.
- Season with salt and pepper to taste.
- Simmer for a few minutes until the sauce thickens.
- Vegetable Kare-Kare is now ready to be served.
