Ingredients
  

  • vegetable broth
  • cilantro
  • onion
  • salt and pepper
  • cayennepepper
  • bell pepper
  • paprika
  • long grain rice
  • cumin powder

Instructions
 

  • Rinse the rice under cold water until the water runs clear. Drain and set aside.
    Heat the vegetable oil in a medium saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  • Add the ground cumin, turmeric powder, paprika, and cayenne pepper to the saucepan. Stir well to coat the onion and garlic with the spices, and cook for an additional minute to enhance the flavors.
  • Add the diced carrot, bell pepper, and frozen peas to the saucepan. Stir and cook the vegetables for about 2-3 minutes until they begin to soften.
    Add the rinsed rice to the saucepan and stir to combine it with the vegetables and spices.
  • Pour in the vegetable broth or water, season with salt and pepper to taste, and give it a good stir.
    Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan with a lid and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid has been absorbed. Avoid stirring the rice while it's cooking to prevent it from becoming sticky.
  • Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for about 5 minutes. This will allow the rice to steam and become fluffy.
    Fluff the rice with a fork and transfer it to a serving dish. Garnish with fresh cilantro or parsley, if desired.
  • Serve the Spicy Rice as a delicious standalone main course or as a flavorful side dish alongside your favorite protein.
