Palm nut soup is a very popular soup in West Africa. In Ghana it is one of the most consumed soups.

It can be found in restaurants (local and continental) and chop bars.

The main ingredient used for this delicious soup is palm nut.

Preparing palm nut soup can be time consuming as compared to other soups.

However, the effort is worth it.

Ingredients to prepare palm nut soup.

  • 1 Olonka of palm nuts
  • 1 pound of cow meat
  • 5 pieces of crabs
  • 1 smoked salmon
  • 3 pieces of large onions
  • 5 medium-sized garden eggs
  • 5 pieces of red bell pepper (kpakposhito)
  • 4 garlic cloves
  • 2 maggi cubes
  • 1 pound of wele
  • 3 ginger

Steps to prepare Palm Nut Soup

  1. Pour palm nuts into a clean bowl and wash thoroughly with clean water.
  2. Place in a large cooking pot and boil under high heat for about 30 minutes until its soft enough.
  3. Remove from fire, drain water and pour into a mortar.
  4. Pound mixture gently until all the covering of the palm nuts fall off the nuts.
  5. Place the pounded mixture into a bowl and cover it.
  6. Wash meat and cut into smaller pieces and place into a clean cooking pot.
  7. Wash ginger, garlic and onions and blend mixture together.
  8. Pour the blended mixture over the chopped meat.
  9. Add some spice and steam until the meat softens.
  10. Clean the crabs and dry fish and set aside.
  11. Add fresh tomatoes, garden eggs, peper and onions into the steaming pot.
  12. Add little amount of water and increase heat to boil.
  13. Add a litre of hot water to the pounded palm nut you set aside earlier.
  14. The water should be moderately hot so that you can put your hands inside.
  15. Mix thoroughly with your hands.
  16. Take the fibre part of the mixture bit by bit and sqeeze the liquid out and set aside.
  17. Sieve the mixture until you have enough liquid with no fibres in it.
  18. Place a colander over the pot of meat and gently pour the palmnut mixture into it.
  19. Allow the soup to cook over high heat.
  20. Remove the tomatoes, onions, garden eggs and pepper and mash together.
  21. Add it back into the cooking pot.
  22. Add maggi cubes
  23. Add crabs
  24. Add dry fish or salmon
  25. Stir gently to avoid mashing the fish.
  26. Cook for over 15 to 20 minutes until the surface turns oily.
  27. Your soup is ready.

 

Palm nut soup can be served fufu, banku, rice balls, eba, etc.
