  • cornmeal
  • water

  • In a large cooking pot, bring 4 cups of water to a boil over medium heat.
  • Gradually add the cornmeal to the boiling water, stirring continuously with a wooden spoon or nsima stick to prevent lumps from forming
  • Continue stirring the mixture vigorously for about 5 minutes to ensure the cornmeal is well incorporated.
  • Reduce the heat to low and cover the pot with a lid. Allow the nsima to cook for approximately 25-35 minutes, stirring every 5 minutes to prevent sticking and ensure even cooking.
  • After 25-35 minutes, the nsima should have a thick and smooth consistency, similar to stiff mashed potatoes. If the nsima is too thick, you can add a small amount of hot water and stir to achieve the desired consistency.
  • Add salt to taste and stir well to distribute the seasoning evenly throughout the nsima.
  • Once the nsima is cooked and has reached the desired consistency, remove it from the heat and let it rest for a few minutes before serving.
  • Serve the nsima hot alongside your favorite stews, such as ndiwo (traditional vegetable stew), chambo (grilled fish), or any other dish of your choice.
