How to cook pumpkin soup

Pumpkin soup is a creamy and flavorful soup made primarily from pumpkin. It is a popular dish, especially during the fall and winter seasons, due to the abundance of pumpkins and their comforting flavors.
The soup is typically made by cooking and pureeing fresh pumpkin along with other ingredients such as onions, garlic, broth, and spices. The addition of cream or coconut milk is common to enhance the richness and creaminess of the soup, although it can be omitted for a lighter version. The soup is often seasoned with spices like cumin, cinnamon, nutmeg, or ginger, which complement the natural sweetness of the pumpkin.

Ingredients

  • 2 pounds (about 1 kilogram) of pumpkin, peeled, seeded, and cut into chunks
  • 1 onion, chopped

  • 1 cup (240 ml) of heavy cream (optional)

  • 2 tablespoons of butter or olive oil

  • 2 cloves of garlic, minced

  • 4 cups (1 liter) of vegetable or chicken broth

  • 1 teaspoon of ground cumin

  • 1/2 teaspoon of ground cinnamon

  • Salt and pepper to taste

  • Optional toppings: roasted pumpkin seeds, croutons, or a drizzle of cream

Instructions

  • Heat the butter or olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until they become soft and translucent.
    2. Add the pumpkin chunks to the pot and sprinkle them with the ground cumin, ground cinnamon, salt, and pepper. Stir well to coat the pumpkin with the spices.
    3. Pour in the vegetable or chicken broth and bring the mixture to a boil. Once it boils, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the pumpkin is tender and easily mashed with a fork.
    4. Turn off the heat and allow the soup to cool slightly. Then, using an immersion blender or regular blender, carefully puree the soup until smooth and creamy. Be cautious when blending hot liquids to avoid any accidents.
    5. Return the blended soup to the pot and place it back on the stove over low heat. If you'd like a creamier texture, you can stir in the heavy cream at this stage. Let the soup heat through for a few minutes, stirring occasionally.
    6. Taste the soup and adjust the seasoning if needed, adding more salt, pepper, or spices according to your preference.
    7. Once the soup is hot and well-seasoned, it is ready to be served. Ladle it into bowls and garnish with toppings of your choice, such as roasted pumpkin seeds, croutons, or a drizzle of cream.
