Ingredients
  

  • beef short ribs
  • vegetable oil
  • onion
  • garlic
  • carrot
  • potatoes
  • beef broth
  • red wine
  • bay leaves
  • thyme
  • salt and pepper
  • celery stalks

Instructions
 

  • Preheat your oven to 325°F (163°C).
    Season the beef short ribs with salt and pepper. Heat the vegetable oil in a Dutch oven or oven-safe pot over medium-high heat.
  • Sear the beef short ribs on all sides until browned. Remove the ribs from the pot and set them aside.
    In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  • Add the diced carrots, celery, and potatoes to the pot. Cook for a few minutes until the vegetables start to soften.
  • Return the beef short ribs to the pot. Add the beef broth, red wine, tomato paste, bay leaves, and dried thyme. Stir well to combine.
  • Bring the mixture to a simmer. Cover the pot with the lid and transfer it to the preheated oven.
    Allow the stew to cook in the oven for 2 to 3 hours or until the beef is tender and easily pulls apart with a fork.
  • Once the stew is done, remove it from the oven and discard the bay leaves. Taste and adjust the seasoning with salt and pepper if needed.
  • Serve the Beef Short Rib Stew hot in bowls. Garnish with fresh herbs, if desired, and enjoy with crusty bread or mashed potatoes.
