Notes

For the best results, choose boneless pork shoulder with some marbling for added tenderness and flavor.
Feel free to adjust the spices and seasonings to suit your taste preferences. You can add more heat with extra chili flakes or adjust the sweetness with a touch of sugar or honey.
If you prefer a thicker stew, you can mix a tablespoon of cornstarch with a little water and stir it into the stew during the last few minutes of cooking.
This stew tastes even better when made ahead of time, as the flavors deepen and develop with time. Consider making it a day in advance and reheating it for an effortless and delicious meal.
Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for longer-term storage. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed to revive the consistency.
