  • Heat olive oil in a large pot or Dutch oven over medium heat.Add the chopped onion and minced garlic to the pot. Sauté for about 5 minutes, or until the onion becomes translucent.
  • Add the diced carrots, celery, and red bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.Add the cauliflower florets to the pot and stir to combine with the other vegetables.
  • Pour in the vegetable broth or water, followed by the diced tomatoes with their juice. Stir well to incorporate all the ingredients.
  • Add the ground cumin, paprika, turmeric, salt, and pepper to the pot. Stir to distribute the spices evenly.
  • Bring the stew to a simmer and reduce the heat to low. Cover the pot and let it cook for about 15-20 minutes, or until the cauliflower is tender.
