Ingredients

  • onion
  • garlic
  • potatoes
  • broccoli florets
  • vegetable broth
  • plant based milk
  • salt and pepper cheese

Instructions
 

  • Heat the olive oil in a large pot over medium heat.Add the chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion turns translucent and fragrant.
  • Add the diced potatoes to the pot and cook for another 5 minutes, stirring occasionally.
  • Add the broccoli florets to the pot and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes or until the potatoes and broccoli are tender.
  • Using a blender or immersion blender, carefully puree the soup until smooth and creamy. Be cautious when blending hot liquids.
  • Return the soup to the pot and stir in the milk. Heat the soup gently over low heat until warmed through.
  • Season the soup with salt and pepper to taste.
