Ingredients
  

  • chicken pieces
  • vegetable oil
  • onion
  • garlic
  • fresh ginger
  • tomatoes
  • ground cumin
  • coriander
  • turmeric powder
  • chili powder
  • salt and pepper
  • fresh cilantro

Instructions
 

  • Heat the vegetable oil in a large skillet or frying pan over medium heat.Add the chopped onion and sauté until translucent and lightly golden, stirring occasionally.
  • Add the minced garlic and grated ginger to the pan and cook for an additional minute until fragrant.
  • Add the chicken pieces to the pan and cook until they are browned on all sides.Add the chopped tomatoes and tomato paste to the pan, stirring well to combine.
  • Sprinkle the ground cumin, ground coriander, turmeric powder, and chili powder over the chicken and tomato mixture. Stir to coat the chicken evenly with the spices.Season with salt and pepper to taste.
  • Reduce the heat to low, cover the pan with a lid, and simmer for about 20-25 minutes, or until the chicken is cooked through and tender, and the flavors have melded together.Remove the lid and allow the sauce to thicken slightly for a few minutes, if desired.
  • Garnish the Chicken Rougaille with fresh chopped cilantro (coriander) before serving.
  • Serve hot with steamed rice, roti, or crusty bread.

You can adjust the spiciness of the dish by increasing or decreasing the amount of chili powder used.
