  • Beef broth
  • Tomato paste
  • Garlic
  • Thyme
  • Bay leaves
  • Salt
  • Black pepper
  • Flour
  • Vegetable oil


  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. In a large bowl, season the beef with salt, black pepper, and flour. Toss to coat.
  3. Add the beef to the pot and cook until browned on all sides.
  4. Add the onions, carrots, celery, and garlic to the pot. Cook until the vegetables are tender.
  5. Stir in tomato paste, thyme, and bay leaves. Cook for a minute.
  6. Pour in the beef broth and bring to a simmer.
  7. Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the beef is tender.
  8. Add the potatoes to the pot and continue simmering until the potatoes are cooked through.
  9. Season with salt and black pepper to taste.
  10. Remove the bay leaves before serving.
