Ingredients
  

  • 2-3 pounds of meat
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves of garlic, minced
  • 2-3 cups beef or chicken broth
  • 2 bay leaves
  • 4-5 potatoes, peeled and cubed
  • 4-5 carrots, peeled and sliced
  • 2-3 cups butternut squash or pumpkin, peeled and cubed
  • 1 cup green beans, trimmed and halved
  • 1 cup cabbage, shredded
  • Salt and pepper to taste
  • Spice mixture

Instructions
 

  • Heat the vegetable oil in a large cast-iron pot (known as a "potjie") over medium-high heat. Add the onions and garlic, and sauté until they become soft and translucent.
  • Add the cubed meat to the pot and brown it on all sides. This helps to seal in the flavors.
  • Pour in the beef or chicken broth, and add the bay leaves. Season with salt, pepper, and the desired spice mixture, if using. Stir well to combine all the flavors.
  • Reduce the heat to low, cover the pot with a lid, and let the meat simmer for about 1-2 hours, or until it becomes tender. Stir occasionally and add more broth if needed to prevent it from drying out.
  • Once the meat is tender, add the cubed potatoes, sliced carrots, butternut squash or pumpkin, green beans, and shredded cabbage to the pot. Stir gently to combine the ingredients.
  • Cover the pot again and let the stew simmer for an additional 30-45 minutes, or until the vegetables are cooked to your desired tenderness.
  • Check the seasoning and adjust with salt and pepper if needed.
    Remove the pot from the heat and let it rest for a few minutes before serving. Garnish with fresh herbs, such as parsley or coriander, for an extra burst of flavor.
