  • cast iron pot
  • bowl
  • spatula
  • knife

  • 2-3 pounds of meat
  • 2 tablespoons vegetable oil
  • 2 onions, chopped
  • 3 cloves of garlic, minced
  • 2-3 cups beef or chicken broth
  • 2 bay leaves
  • 4-5 potatoes, peeled and cubed
  • 4-5 carrots, peeled and sliced
  • 2-3 cups butternut squash or pumpkin, peeled and cubed
  • 1 cup green beans, trimmed and halved
  • 1 cup cabbage, shredded
  • Salt and pepper to taste
  • Spice mixture

  • Heat the vegetable oil in a large cast-iron pot (known as a "potjie") over medium-high heat. Add the onions and garlic, and sautĂ© until they become soft and translucent.
  • Add the cubed meat to the pot and brown it on all sides. This helps to seal in the flavors.
  • Pour in the beef or chicken broth, and add the bay leaves. Season with salt, pepper, and the desired spice mixture, if using. Stir well to combine all the flavors.
  • Reduce the heat to low, cover the pot with a lid, and let the meat simmer for about 1-2 hours, or until it becomes tender. Stir occasionally and add more broth if needed to prevent it from drying out.
  • Once the meat is tender, add the cubed potatoes, sliced carrots, butternut squash or pumpkin, green beans, and shredded cabbage to the pot. Stir gently to combine the ingredients.
  • Cover the pot again and let the stew simmer for an additional 30-45 minutes, or until the vegetables are cooked to your desired tenderness.
  • Check the seasoning and adjust with salt and pepper if needed.
Remove the pot from the heat and let it rest for a few minutes before serving. Garnish with fresh herbs, such as parsley or coriander, for an extra burst of flavor.
  • Serve the South African Potjiekos hot, traditionally enjoyed with rice, samp, or bread on the side. Share this hearty stew with family and friends, and savor the rich flavors of South African cuisine.

Feel free to customize the vegetables and meat used in the potjiekos according to your preference or availability of ingredients.
The cooking times may vary depending on the type and size of the meat cubes. Adjust accordingly to ensure the meat is cooked through and tender.
