Vegetable Kare-Kare

Ingredients

  • Eggplant
  • Sitaw (Long beans)
  • Pechay (Bok choy)
  • String beans
  • Peanut butter
  • Garlic
  • Onion
  • Annatto powder
  • Fish sauce
  • Salt
  • Pepper
  • Cooking oil
  • Water

Preparation Steps

  1. Heat cooking oil in a pot and sauté garlic and onion.
  2. Add water and bring to a boil.
  3. Add the eggplant, sitaw, pechay, and string beans to the pot. Cook until the vegetables are tender.
  4. In a separate bowl, dissolve peanut butter in water and add to the pot.
  5. Add annatto powder and fish sauce. Stir well to combine.
  6. Season with salt and pepper to taste.
  7. Simmer for a few minutes until the sauce thickens.
  8. Vegetable Kare-Kare is now ready to be served.
