Ingredients
- black–eyed peas, or beans
- palm oil
- onion
- ginger
- garlic
- curry powder
- Fresh tomatoes
- tomato paste
- pepper
- leek, finely chopped
- Salt to taste
- smoked salmon
Instructions
- Wash and soak beans overnight in water to soften it for about seven hours.
- Next thing is to gather all your ingredients. Blend your garlic and ginger and finely chop your tomatoes and onions
- Boil beans on high heat until it becomes softened, adding water as and when necessary and set it aside when soft.
- In a saucepan, heat some palm oil and add in your chopped onions
- cook until it becomes soft or translucent.
- Add in your blended or powdered pepper, ginger and garlic and stir for some minutes
- Add the chopped tomatoes, tomato paste, salt and cook.
- Add in your curry powder and other necessary seasonings of your choice.
- Fry on medium heat and cover it for it to cook well
- Add in your salmon and some for some few minutes
- Using a masher, mash your beans to get that creamy substance and add it to the sauce on medium heat
- Stirring occasionally to make sure everything is well incorporated. Cook until the beans are tender and the beans and stew now giving thick-creamy consistency.
- When it's done, your red African dish is ready to be served.
