Ingredients
  

  • pumpkin puree

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  • Add the grated ginger, ground cumin, and ground cinnamon to the pot. Stir and cook for about a minute to release their flavors.
  • Add the chopped carrots to the pot and cook for 5 minutes, stirring occasionally.Pour in the vegetable broth and bring it to a boil. Reduce the heat to a simmer and add the pumpkin puree. Stir well to combine.
  • Cover the pot and let the soup simmer for about 20 minutes, or until the carrots are tender.
  • Using an immersion blender or regular blender, carefully puree the soup until smooth and creamy. If using a regular blender, work in batches and be cautious of the hot liquid.
  • Return the pureed soup to the pot. Stir in the coconut milk and season with salt and pepper to taste. Heat the soup over low heat until warmed through.
