Ingredients
  

  • plain flour

  • polenta (maize meal, corn meal)

  • sugar
  • eggs
  • baking powder

  • milk
  • salt
  • butter
  • Creamed corn

Instructions
 

  • In a large bowl, combine the flour, cornmeal, sugar, salt, and baking powder.
    Mix all the dry ingredients to ensure it's evenly combined and well distributed
  • Carefully add the milk, creamed corn, eggs, and melted butter to the dry ingredients. Mix through until just perfectly combined.
  • Grease and line a loaf pan with parchment or baking paper.
  • Pour the batter into the prepared loaf tin and bake until a toothpick comes out clean from the centre of the loaf.
  • Allow to cool in the tin before placing it on a cooling rack to cool completely.
  • And place on a tray.

This quick and easy mealie bread is a delicious moist cornbread that can be served as a side dish or enjoyed by itself. This cornbread made with creamed corn can be served with butter and honey, but I also enjoy it by itself. This mealie bread is the perfect accompaniment to any braai or barbeque.
