Ripe plantain and beans, popularly known as “red red”, is a meal sold at various food joints in Ghana. It is mostly eaten for lunch. It is an affordable meal and also makes you feel full. This makes it preferable for many people. Though it is commonly sold in food joints and restaurants, you can also make it at home and enjoy it.

Today, we bring you a tasty ‘red red’ recipe which you can try at home in your free time.

 

Ingredients for red red

½ cup of black eyed beans

Palm oil

  • 1 onion
  • 2 teaspoons of powdered pepper (cayenne pepper)
  • Salt to taste
  • Maggi spice
  • Two tomatoes
  • ½ clove of garlic
  • Small momone
  • ¼ cup of gari
  •  

 

What Plantain and Beans Can Be served With

Plantain and beans can be served with pear, boiled egg, fried fish or fried chicken.

  • Frying pan

 

Steps to prepare red red

  1.  Soak beans in water for about an hour or till it becomes soft.
  2.  Drain the water, add fresh water and bring to boil till it becomes soft. If water around it finishes and it’s still not soft, add more and stir. Leave on fire till it softens.
  3.  Remove from fire when it’s ready and set aside.
  4.  Chop your onions and tomatoes. Add garlic and a little bit of maggi and blend together with just a little water, enough to blend.
  5.  Wash your momone and set aside.
  6.  Put another saucepan on fire.
  7.  Pour some palm oil into it.
  8.  Add in your momone. Let it fry a bit in the palm oil.
  9.  Add your blended tomatoes, onion, garlic and maggi into the palm oil.
  10. Let it cook on fire for a while and stir where necessary.
  11.  Add a little salt and cayenne pepper (1 teaspoon) and stir.
  12.  Finally add your cooked beans to it, as much as you want and stir.
  13.  Leave it to simmer for a while and remove from fire.
  14.  Cut your ripe plantain into your desired sizes, add salt and a little cayenne pepper (1 teaspoon) and set aside in a bowl.
  15.  Pour oil into a frying pan and put on fire.
  16.  Put the ripe plantain into the oil and let it fry.
  17.  Remove them from the oil and put them on a plate. Blot excess oil from the plantain with a tissue.
  18.  Dish some of the beans stew into a bowl and add some gari to it (the quantity you prefer) and mix.
  19.  Add the fried plantain to the beans stew.

Your ‘red red’ is now ready to serve.

Not every one wants the beans with gari. So if you don’t want it that way, you can choose not to mix the beans with gari when preparing your ‘red red’.
