Ingredients
  

  • 1 lb (450g) beef liver, sliced into thin strips

    - 2 tablespoons olive oil or cooking oil

    - 1 large onion, sliced

    - 2 cloves of garlic, minced

    - 2 carrots, peeled and sliced

    - 2 celery stalks, sliced

    - 1 bell pepper, sliced (optional)

    - 4 cups beef or vegetable broth

    - 2 tablespoons tomato paste

    - 1 teaspoon dried thyme

    - 1 teaspoon dried rosemary

    - Salt and pepper to taste

    - 2 tablespoons all-purpose flour (optional, for thickening)

    - Chopped fresh parsley for garnish (optional)

Instructions
 

  • Heat the oil in a large pot or Dutch oven over medium heat.
    2. Add the sliced beef liver to the pot and cook for 2-3 minutes until browned on all sides. Remove the liver from the pot and set it aside.
    3. In the same pot, add the sliced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
    4. Add the sliced carrots, celery, and bell pepper (if using) to the pot. Cook for another 5 minutes, stirring occasionally.
    5. Return the browned liver slices to the pot and mix well with the vegetables.
    6. In a small bowl, whisk together the beef or vegetable broth, tomato paste, dried thyme, dried rosemary, salt, and pepper. Pour the mixture into the pot, covering the liver and vegetables.
    7. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-30 minutes, or until the liver is cooked through and tender.
    8. If you prefer a thicker stew, you can mix the flour with a little water to make a slurry, then gradually stir it into the stew. Cook for an additional 5 minutes to allow the stew to thicken.
    9. Taste and adjust the seasoning as needed.
    10. Serve the beef liver stew hot, garnished with chopped fresh parsley if desired. It pairs well with rice, mashed potatoes, or crusty bread.
