Roasted Autumn Frost Squash with Sage Butter

Ingredients

  • 1 medium-sized Autumn Frost Squash, halved and seeds removed
  • 4 tablespoons unsalted butter
  • 10 fresh sage leaves
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • Grated Parmesan cheese, for serving (optional)

Preparation Steps

  1. Preheat the oven to 400°F (205°C).
  2. Brush the cut side of the squash with olive oil and season with salt, pepper, and minced garlic.
  3. Place the squash cut side down on a baking sheet lined with parchment paper.
  4. Roast the squash in the oven for about 40-45 minutes, or until tender and slightly caramelized.
