Ingredients
  

  • onion
  • garlic
  • celery stalk
  • carrot
  • bell pepper
  • green beans
  • diced tomatoes
  • herbs both fresh and dry
  • salt and pepper
  • fresh parsley
  • vegetable broth

Instructions
 

  • Heat some oil in a large pot and add the chopped onion and minced garlic. Sauté until they are soft and fragrant.
  • Add the diced carrots, celery, red and yellow bell peppers, and green beans to the pot. Cook for about 5 minutes until they slightly soften.Pour in the vegetable broth and diced tomatoes. Add the dried herbs and stir well.
  • Bring the soup to a boil, then reduce the heat and let it simmer for about 20-30 minutes until the vegetables are tender.Season with salt and pepper to taste.
  • If you prefer a smoother consistency, use an immersion blender to puree the soup. Otherwise, leave the soup as it is.
  • Serve the weight loss soup in bowls and garnish with fresh herbs.
