Ingredients
  

  • 1 pound (450g) of liver (beef, chicken, or lamb), sliced into bite-sized pieces

  • 1 large onion, finely chopped

  • 2 medium-sized potatoes, peeled and diced
  • 1 cup of beef or vegetable broth

  • 1/2 cup of red wine (optional)

  • 1 teaspoon of dried thyme

  • 1 teaspoon of paprika

  • Salt and pepper to taste

  • 2 tablespoons of cooking oil

  • Chopped fresh parsley for garnish (optional)

Instructions
 

  • Heat the cooking oil in a large pot or Dutch oven over medium heat.
  • Add the chopped onions and minced garlic to the pot and sauté until they become soft and translucent.
  • Add the liver pieces to the pot and cook them until they are browned on all sides. Make sure not to overcook them, as liver can become tough if cooked for too long.
  • Once the liver is browned, add the diced carrots and potatoes to the pot. Stir everything together and cook for a couple of minutes to allow the flavors to blend.
  • In a small bowl, whisk together the beef or vegetable broth, red wine (if using), tomato paste, dried thyme, and paprika. Pour this mixture into the pot.
