  • 4 cups vegetable broth- 2 stalks lemongrass, bruised and chopped into pieces

  • - 2-inch piece of galangal or ginger sliced
  • 3-4 kaffir lime leaves, torn
  • 2-3 Thai chili peppers
  • sliced (adjust according to your spice preference
  • 8 ounces mushrooms (such as button or shiitake) sliced
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, thinly sliced
  • 1 cup cherry tomatoes
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons soy sauce or tamari (adjust to taste)
  • 2 tablespoons lime juice
  • Fresh cilantro and Thai basil, for garnish
  • Optional: tofu or other vegetarian protein of your choice

Instructions
 

  • In a large pot, bring the vegetable broth to a simmer over medium heat.
  • Add the lemongrass, galangal or ginger, kaffir lime leaves, and Thai chili peppers to the pot. Let it simmer for 10 minutes to infuse the flavors.
  • If using tofu, you can add it now and let it simmer for a few minutes to soak up the flavors. Otherwise, you can add it later with the vegetables.
  • Add the mushrooms, bell pepper, carrot, and cherry tomatoes to the pot. Simmer for another 5 minutes until the vegetables are tender.
  • Stir in the coconut milk, soy sauce or tamari, and lime juice. Let it simmer for an additional 2-3 minutes to heat through.
  • Remove the lemongrass, galangal or ginger, and kaffir lime leaves from the soup before serving.
