Instructions
 

  • Place the sushi rice in a fine-mesh sieve or strainer and rinse it under cold water until the water runs clear. This helps remove excess starch from the rice.
  • In a medium-sized saucepan, combine the rinsed sushi rice and water. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and cover the saucepan with a tight-fitting lid. Simmer the rice for 15-20 minutes, or until all the water is absorbed and the rice is tender.
  • While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan. Heat the mixture over low heat until the sugar and salt dissolve completely. Remove it from the heat and let it cool.
  • Once the rice is cooked, transfer it to a large mixing bowl. Gradually pour the seasoned vinegar mixture over the rice while gently mixing it with a wooden spatula or fork. Be careful not to smash or overmix the rice. Continue mixing until the rice is evenly coated with the vinegar mixture.
