Delicious Chakalaka Recipe
Chakalaka is a South African vegetable relish usually spicy, that is traditionally served with bread, pap, samp, stews, or curries. It is flavourful and so easy to make.
Ingredients
- 3 tbsp oil
- 1 medium-sized onion
- 2 cloves crushed garlic
- 2 tbsp finely grated ginger
- 2 tbsp mild curry powder
- 1 chopped red pepper
- 1 chopped yellow pepper
- 5 large grated carrots
- 2 tbsp tomato puree
- 400 g can chopped tomatoes
- 2 sprigs fresh thyme leaves
- salt
- water
Instructions
- Pour oil in a saucepan under medium heat. Add onion and sauté until translucent and softened.
- Stir in garlic, ginger and curry powder. Stir to combine.
- Add peppers then cook for 2 minutes.
- Add carrots. Stir to combine and ensure they’re coated in the mixture.
- Add tomatoes and tomato paste. Stir and cook mixture for 5-10 mins.
- Mixture should be well combined and thickened slightly.
- Add baked beans and fresh thyme. Simmer for 5 mins.
- Remove from heat.
- Serve it with Rice or any food of choice
