Chakalaka is a South African vegetable relish usually spicy, that is traditionally served with bread, pap, samp, stews, or curries. It is flavourful and so easy to make.

Ingredients
  

  • 3 tbsp oil
  • 1 medium-sized onion
  • 2 cloves crushed garlic
  • 2 tbsp finely grated ginger
  • 2 tbsp mild curry powder
  • 1 chopped red pepper
  • 1 chopped yellow pepper
  • 5 large grated carrots
  • 2 tbsp tomato puree
  • 400 g can chopped tomatoes
  • 2 sprigs fresh thyme leaves
  • salt
  • water

Instructions
 

  • Pour oil in a saucepan under medium heat. Add onion and sauté until translucent and softened.
  • Stir in garlic, ginger and curry powder. Stir to combine.
  • Add peppers then cook for 2 minutes.
  • Add carrots. Stir to combine and ensure they’re coated in the mixture.
  • Add tomatoes and tomato paste. Stir and cook mixture for 5-10 mins.
  •  Mixture should be well combined and thickened slightly.
  • Add baked beans and fresh thyme. Simmer for 5 mins.
  • Remove from heat.
  • Serve it with Rice or any food of choice

  1. Ingredients list does not include beans. Photo obviously has beans. Step 7 in method says to add beans… Maybe edit ingredients list to include beans, otherwise it is a bit confusing.
