Chakalaka is a South African vegetable relish usually spicy, that is traditionally served with bread, pap, samp, stews, or curries. It is flavourful and so easy to make.
3 teaspoon oil
1 medium chopped onion
2 cloves crushed garlic
2 teaspoons finely grated ginger
2 tbsp mild curry powder
1 chopped red pepper
1 chopped yellow pepper
5 large grated carrots
2 teaspoons tomato purée
400 g can chopped tomatoes
2 sprigs fresh thyme leaves
400 g can baked beans
Salt and pepper
Pour oil in a saucepan under medium heat. Add onion and sauté until translucent and softened.
Stir in garlic, ginger and curry powder. Stir to combine. Add peppers then cook for 2 minutes.
Add carrots. Stir to combine and ensure they’re coated in the mixture.
Add tomatoes and tomato paste. Stir and cook mixture for 5-10 mins. Mixture should be well combined and thickened slightly.
Add baked beans and fresh thyme. Simmer for 5 mins.
Remove from heat. Serve it with Rice or any food of choice
