Baked Beans Salad

Baked beans is a dish traditionally containing white beans that are parboiled and then, in the US, baked in sauce at low temperature for a lengthy period.
Baked beans are a source of protein and are high in fibre, so are not a bad choice, especially on wholegrain toast or a jacket potato. But they do contain salt and sugar. Too much salt over time can contribute to high blood pressure, while sugar adds energy (calories) without any other nutritional value.

Ingredients
  

  • canned baked beans

    red onion diced

    tomato diced, peeled & seeded

    chilli sauce

    hard-boiled egg, peeled & sliced

    fresh parsley 

    Handful of coriander leaves chopped

    green chilies

    lemon juice

    salt

Instructions
 

  • Gather your ingredients
  • In a large bowl mix together the baked beans, red onion, tomato, coriander and green chilli.
  • Add in your chili sauce and the lemon juice.
  • Season with some salt to taste and mix it very well.
  • Before serving, garnish with sliced egg and a sprig of parsley if used.
  • You can serve it now or refrigerate and serve it later.

I never knew baked beans could be this good. I never knew baked beans could be improved upon. I never knew baked beans could be such a triumph, such a prayer, such a song.
They can be made the night before, but wait until you're ready to bake the beans to add the bacon on top to ensure optimum crispness.
Baked beans are actually cooked inside the can. The raw beans are first soaked and blanched to soften them. They are then sealed in the can with the sauce and secret spice blend and steamed to fully cook and kill any bacteria.
