Ingredients for egg stew

  • 3 eggs
  • 1 small onion
  • 7 tomatoes
  • 1 teaspoon of tin tomatoes
  • Salt (to taste)
  • 1 teaspoon of powdered pepper
  • 1 clove of garlic (crushed)
  • 1 teaspoon of ground ginger
  • Dried smoked shrimps (optional)
  • Vegetable oil

What Egg Stew Can Be Served With

Egg stew can be served with plain rice, boiled yam, potatoes and plantain.

 

 

Steps to prepare egg stew

  1.  Chop onions and tomatoes onto a plate.
  2.  Wash dried shrimps, break head and tail off, further break into smaller pieces and put on a plate.
  3.  Put a saucepan on fire and pour vegetable oil into it.
  4.  Add your chopped onions and tomatoes and stir.
  5.  Add your tin tomatoes, salt and powdered pepper and stir.
  6.  Now add the crushed garlic and ginger and stir.
  7.  Let it cook for a while.
  8.  Add the dried shrimps and stir.
  9.  Break the eggs first into a bowl and beat it.
  10.  Add it to the stew on fire and leave the eggs to form. Stir after they have formed and let it mix well with the stew.
  11.  When it’s ready, remove from fire and serve.
