Ingredients
  

  • 2 medium-sized squash (any variety)

  • 2 cups granulated sugar

  • 1 lemon (juice and zest)

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

Instructions
 

  • Wash the squash thoroughly and cut off the ends. Peel the skin and remove the seeds. Cut the squash into small, uniform cubes.
    2. In a large saucepan, combine the squash cubes, sugar, lemon juice, and lemon zest. Mix well to coat the squash evenly.
    3. Place the saucepan over medium heat and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 30-40 minutes, stirring occasionally. The squash should become soft and translucent.
    4. Add the ground cinnamon, nutmeg, and cloves to the saucepan. Stir well to incorporate the spices into the mixture. Continue cooking for an additional 10 minutes to allow the flavors to blend together.
    5. At this point, you can either leave the jam squash chunky or use an immersion blender to puree it for a smoother consistency. If you prefer a smooth texture, carefully blend the mixture until desired consistency is reached.
    6. Once the jam squash has reached your desired consistency, remove the saucepan from the heat and let it cool completely. The jam will thicken as it cools.
    7. Transfer the jam squash to sterilized jars and seal tightly. Store in a cool, dark place or in the refrigerator.
    8. The jam squash can be enjoyed on toast, biscuits, or used as a filling for pastries and cakes. It also makes a great homemade gift.
