Ingredients

  • African potatoes (white sweet potatoes)

  • Water
  • Salt (to taste)

  • Butter or cooking oil (optional, for added flavor)

Instructions

  • Wash the African potatoes thoroughly to remove any dirt or debris. Peel the skin using a vegetable peeler or a sharp knife.
    2. Cut the potatoes into cubes or slices, depending on your preference. Try to keep the size relatively uniform to ensure even cooking.
    3. Place the cut potatoes in a pot and add enough water to cover them completely. Add a pinch of salt to enhance the flavor.
    4. Bring the water to a boil over medium heat. Once it reaches a boil, reduce the heat to low and simmer the potatoes until they become tender. This typically takes around 15-20 minutes, but cooking times may vary depending on the size and freshness of the potatoes.
    5. To check if the potatoes are done, insert a fork or a knife into a potato piece. If it easily goes through without resistance, they are cooked. If not, continue simmering for a few more minutes and test again.
    6. Once the potatoes are tender, drain the water from the pot.
    7. At this point, you have the option to add some butter or cooking oil to the drained potatoes. This step is not mandatory, but it can add richness and enhance the flavor. Mix gently to coat the potatoes with the butter or oil.
    8. Serve the cooked African potatoes as a side dish alongside your main course. They can be enjoyed plain or seasoned with additional salt and pepper to taste.
