Add the shredded cabbage to the pot and stir well to combine with the other ingredients. Cook for an additional 3-4 minutes until the cabbage begins to wilt.
Pour in the vegetable or chicken broth and diced tomatoes with their juices. Stir in the dried thyme, paprika, salt, and pepper. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the stew simmer for about 25-30 minutes, or until the cabbage and vegetables are tender. If using beans, add them to the pot at this stage and continue simmering until they are heated through.
Taste the stew and adjust the seasoning if needed.
