Heat a drizzle of olive oil in a large skillet or frying pan over medium heat.Add the chopped onion, minced garlic, diced carrot, and diced celery to the pan. Sauté the vegetables for 4-5 minutes or until they start to soften.
Push the vegetables to one side of the pan and add the minced meat to the other side. Break up the meat using a wooden spoon or spatula and cook until browned and no longer pink.

Sprinkle in the dried oregano and dried basil, and season with salt and pepper to taste. Stir everything together.
Reduce the heat to low and let the sauce simmer for at least 15-20 minutes to allow the flavors to meld together. You can simmer it for longer if desired, as a longer cooking time will intensify the flavors.
