Heat the vegetable oil in a large, deep pan or pressure cooker over medium heat.
Add the chopped onions and sauté until they turn golden brown. Add the minced garlic and grated ginger to the pan and cook for another minute until fragrant.
Add the goat meat pieces to the pan and cook until they are browned on all sides.
Stir in the chopped tomatoes and cook until they become soft and mushy. Add the ground coriander, cumin, turmeric, red chili powder, and salt. Mix well to coat the meat with the spices.
If using a pressure cooker, add a cup of water, close the lid, and cook for about 20-25 minutes or until the meat is tender. If using a regular pan, add about 2 cups of water, cover, and simmer on low heat for about 1.5 to 2 hours or until the meat is tender, stirring occasionally and adding more water if needed.
Once the meat is tender, sprinkle garam masala over the curry and mix well. Adjust the seasoning according to your taste.
