Ingredients
  

  • 1 smoked gammon joint (approximately 2-3 pounds or 1-1.5 kilograms)

  • Water, enough to cover the gammon
  • 1 onion, peeled and halved
  • 2 carrots, peeled and roughly chopped

  • 2 celery stalks, roughly chopped

  • 2 bay leaves

  • Whole cloves (optional, for garnish)

  • 1 tablespoon brown sugar (optional, for glazing)

  • 1 tablespoon Dijon mustard (optional, for glazing)

Instructions
 

  • Place the smoked gammon joint in a large pot or Dutch oven and cover it with water.
    2. Add the onion halves, chopped carrots, celery, and bay leaves to the pot. These ingredients will enhance the flavor of the gammon as it cooks.
    3. Bring the water to a boil, then reduce the heat to low and let the gammon simmer. Allow approximately 20 minutes of cooking time per pound (or 45 minutes per kilogram) of gammon.
    4. While the gammon is simmering, you can prepare a glaze if desired. In a small bowl, mix together the brown sugar and Dijon mustard until well combined. This glaze will add a sweet and tangy flavor to the gammon.
    5. Preheat your oven to 400°F (200°C).
    6. Once the gammon is cooked through and tender, carefully remove it from the pot and place it on a roasting rack or in a roasting pan.
    7. Score the surface of the gammon by making shallow cuts in a diamond pattern. If desired, you can insert whole cloves into the diamond intersections for added flavor and a decorative touch.
    8. If you prepared the glaze, brush it over the scored surface of the gammon, ensuring it is evenly coated. This will create a caramelized and flavorful crust during roasting.
    9. Place the gammon in the preheated oven and roast for approximately 20-30 minutes, or until the surface is golden brown and glazed. Keep an eye on it to prevent burning.
    10. Once the gammon is roasted to your liking, remove it from the oven and let it rest for a few minutes before slicing.
    11. Slice the smoked gammon and serve it warm. It pairs well with a variety of sides like roast potatoes, vegetables, or a fresh salad.
