- Salt

Instructions
- In a medium, heavy-bottomedsaucepan, melt the butter. Stir in the flour for about 1 minute over lowheat.
- Cook, whisking constantly, overmedium heat until the sauce is smooth and slightly thickened.
- Season with stock and spices.Simmer, whisking constantly, for about 10 minutes, or until thick.
- Heat through the cream andbiltong. Remove from the heat and stir in the cheese.
- Garnish with extra biltong slicesand serve immediately with warm bread rolls as an appetizer or light meal.
